There's something about a grill and a skewer- they just go together so darn well. Not to mention they're also super easy to throw together. A little marinating... a little skewering... a little grilling... and done!
So try one or all of these- I think you'll like 'em:

Garlic Cilantro Steak Skewers: Start with 1 pound of your favorite steak (cubed). Marinate steak in 1/3 cup olive oil, 1 tablespoon soy sauce, 1 clove fresh minced garlic and 2 tablespoons of chopped cilantro.
Let steak marinade for about an hour. Take marinated cube steak along with chopped veggies of your choice. Assemble both meat and veggies on skewers and grill for anywhere between 20-40 minutes depending on meat preference.

Pesto Shrimp Skewers: Start with 1 pound of shrimp (size of your choice). Devein shrimp and cut in half if needed. Brush shrimp with a pesto sauce of your choice. Add basil, cilantro, lemon and even parsley. Let shrimp sit for about 15 minutes then
grill for about the same.
So simple so good.

Jerk Chicken Skewers:
Combine 1 pound cubed boneless chicken thighs, 1 tablespoon jerk seasoning, 1 tablespoon olive oil and about ½ a lime's worth of juice.
Let sit up to three hours in marinade. Skewer and grill for about 20 minutes.

Chipotle BBQ Pork Skewers: Start with 1 pound cubed pork (if not already cubed simply cut into cubes). Combine about ½ cup of regular bbq sauce (your choice) and one minced chipotle pepper. Skewer cubes of pork loin and then grill for about 20 minutes, brushing with the sauce once about ¾ of the way done.
One last tip: If you're using wood skewers soak them in water for at least an hour before hitting the grill- you don't want them to burn along with your delicious meal.
