When most homeowners think of barbecuing or BBQ food, typically hot dogs, burgers, steak and summer time are the first things that come to mind. Surely these are all great choices to prepare on your outdoor grill, but why limit yourself to just these food items; and why limit your BBQing to just the summer months?
Why not prepare an entire meal on your outdoor BBQ setup, any time of year? If you’re thinking that preparing an entire meal on your grill would be too much work, or take too much time- we’re here to make you think again.
System Pavers had the pleasure of hosting professional chef and TV personality The Healthy Voyager, Carolyn Scott-Hamilton, at our outdoor Design Center to demonstrate how you can prepare a delicious and healthy meal on your outdoor BBQ, any time of year- all in just 10 quick minutes.
Watch along as Carolyn takes you through the motions of preparing some amazing Pesto Portobello Mushrooms, Tangy Grilled Brussel Sprout Skewers and Grilled Chocolate Chip & Strawberry Quesadillas in just 10 minutes. Recipes:
Pesto Portobello Mushrooms
Ingredients Needed:
- 1 1/2 cups fresh basil
- 1/3 cup olive oil
- 1 cup pine nuts (other nuts, such as almonds or walnuts may be substituted)
- 5 cloves garlic
- 1/3 cup nutritional yeast
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
Directions:
Place all pesto ingredients into blender and blend until smooth (add more salt, pepper and olive oil as needed)
Clean mushrooms and remove stems (can reserve stems for other use) and place caps on a plate with the gills up
In a small bowl, our pesto evenly over the mushroom caps and let stand for one hour
Heat grill to high
Oil the grill with olive oil
Place mushrooms on grill and flip once at 5 minutes. Remove from grill at 10 minutes
Tangy Grilled Brussel Sprout Skewers
Ingredients Needed:
- 1 lb brussel sprouts, halved
- 3 tbsp extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 tbsp agave
- 1 tbsp dijon mustard
- 2 tsp crushed red pepper flakes
- salt, to taste
Directions:
- In a large bowl, combine brussel sprouts, olive oil, vinegar, agave, mustard and red pepper flakes
- Season with salt and marinate for 30-45 minutes
- Heat grill to high
- Place sprouts on skewers
- Place skewers on grill and rotate frequently until sprouts are tender and thoroughly cooked (about 10 minutes)
Chocolate Strawberry Grilled Quesadillas
Ingredients Needed:
- Four 6-inch flour tortillas
- Chocolate chips of your choice
- Strawberries, sliced
Directions:
- Preheat grill to medium heat
- Lightly oil grill grates
- Place flour tortillas on grill and heat for 2-3 minutes or until bottom of tortilla starts to turn brown
- Sprinkle chocolate chips on one half of the tortilla about 30 seconds before you take them off the grill
- Remove tortillas with chocolate chips from grill
- Place strawberries on the same half as the chocolate chips and fold empty half over quickly to finish the melting process
